Breakfast Recipes

We have become so used to the idea of breakfast cereal for breakfast that one of the most common questions is always "What can I eat for a low carb breakfast?" So while any of the low carb meals would work, here are some breakfast ideas to get you started :)

Boiled Egg and Fruit

1 Egg
Any 2 of:
Boil egg. Serve in an egg cup with 2 fruit on a plate. For kiwis I suggest cut it in half and then spoon out the flesh.
Omelette and fried tomato
Omlette & Tomato
1 Egg
1/2 Tomato
Olive or avo oil
Chives (optional)
Beat the egg in a mug. Oil a small microwave safe bowl and pour in egg.
Micro for 30 secs. Break up cooked egg and mix.Cook for an another 30 secs.
Slice tomato and micro for 1 min.
Chopped chives can be added to food before cooking for extra flavour.
Poached Egg and Fried Tomato

1 Egg
1/2 Tomato
Poach egg - special dishes are available to do this in the microwave easily.
Slice tomato and cook for 1 min in micro.
2 Eggs
1/4 cup Soy Flour
1/3 cup Cream
1 tsp Baking Powder
1 Tbsp Olive Oil
1 Tbsp Flaxseeds / Linseeds
1/8 tsp Salt
Mix all ingredients to make pancake batter.
Spray pan with olive oil non-stick cooking spray.
Pour batter onto pan in 4" (or smaller) circle. Once edge of pancake starts looking cooked, flip.
Makes roughly 6.
Berries in Yoghurt Handful berries
1 tub unsweetened yoghurt
Pour yoghurt over berries and serve.
You can also sprinkle with nuts of your choice.
Nutty Cereal 200g Flaked Almonds
100g Pumpkin Seeds
100g Walnuts, broken up
1 tsp Cinnamon
1 tsp Ginger
2 Tbsp Oil
Fry nuts, seeds and spices in the oil for 5-10 minutes, till warmed through.
Serve in a bowl with milk.
Much more filling than your average cereal, this will make enough for about 12 servings.
Chia Seed Porridge 2Tbsp Chia Seeds
1Tbsp Coconut
Pinch Ginger
Pinch Cinnamon
Put seeds, coconut and ginger in a cereal bowl and cover with water.
Microwave for 3 mins. Watch for overflowing. Add more water if preferred. Microwave for another 2 mins.
Once seeds have absorbed the water sprinkle with cinnamon and serve. Can be eaten with a little milk or yoghurt if preferred.
