Mexican Chicken Recipe

Mexican Chicken

This recipe is just delicious.


2 tins Chicken
1/2 cup Sour Cream
1 tin Kidney Beans
1 tsp Mixed Herbs
1 tsp Paprika
4 Spring Onions or 1 Onion
3 Tomatoes
1 Baby Cabbage
Enough Cheese for 4 slices
1-2 Tbsp Avocado or Coconut Oil for cooking
Black pepper and salt for seasoning


Chop onion. Fry onion in oil on high for 2-3 minutes.

Add chicken, beans, cream, herbs and paprika. Bring mixture to the boil.

Slice cabbage and cook in the microwave in a little water for 5 minutes.

Chop the tomato into chunks. Grate or finely slice the cheese.

Dish up the cabbage onto plates. Spoon chicken mixture onto the cabbage.

Top with cheese and tomato.
