Microwave Ratatouille Recipe

A surprisingly delicious way to eat this super food.


1 Onion
1 Aubergine/Brinjal/Eggplant
6 Courgettes/Marrows
1 Tin of Tomatoes
1 Tbsp Garlic
Black Pepper to season
2 Tbsp Avocado/Coconut Oil
A tin of lentils can be added to pad the meal out


Chop onion and microwave in oil and garlic for 2 minutes. Slice the aubergine, add it to the onion and microwave for 3 minutes.

Slice the marrows and add them to the dish with the tomatoes. Add the lentils, if using.

Microwave for 2 minutes, sprinkle with pepper and microwave for an additional 5 minutes.
